Eurest, part of Compass Group UK & Ireland, is looking for an outstanding Operations Manager to lead our H beauty Champagne Bars , working in partnership with Harrods and H beauty to deliver exceptional hospitality across a multi-site portfolio.

What you’ll be doing

Operational Leadership

• Lead the day-to-day operation of Eurest's H beauty Champagne Bars, ensuring consistently exceptional service, presentation and operational standards across every location.

• Provide visible, hands-on leadership to site managers and front-line teams, building a culture of accountability, collaboration and continuous improvement.

• Conduct regular site visits, operational reviews and compliance audits, identifying opportunities to improve performance and share best practice.

• Ensure every Champagne Bar delivers a seamless, premium guest experience in line with Harrods and H beauty expectations.

Commercial Growth & Business Performance

• Lead the delivery of sales, profit and margin targets across the portfolio, taking ownership of commercial performance.

• Use financial and operational data to identify trends, manage risks and unlock opportunities for growth.

• Drive revenue through premium beverage sales, food and drink pairings, events and seasonal activations.

• Improve average spend, customer conversion and repeat visits while maintaining outstanding service standards.

• Support budgeting, forecasting and business planning, with a strong focus on labour efficiency, stock control and profitability.

Client & Stakeholder Relationships

• Build strong, collaborative relationships with H beauty, Harrods and Eurest and Compass Group stakeholders.

• Act as the operational lead for all Champagne Bar activity, bringing teams together to deliver shared commercial and service objectives.

• Present performance updates, improvement plans and new business opportunities to senior stakeholders with confidence and credibility.

• Work closely with retail, marketing and beauty teams to create engaging experiences that enhance customer loyalty and maximise sales opportunities.

People Leadership & Development

• Lead, coach and develop site management teams, building capability and creating a strong pipeline of future talent.

• Drive recruitment, succession planning, performance management and colleague engagement across the portfolio.

• Set clear expectations, recognise great performance and support colleagues to deliver their best.

• Lead operational change, new initiatives and service improvements, ensuring teams are engaged, supported and equipped to succeed.

What you’ll bring

Essential experience

• Proven multi-site operations management experience within hospitality, retail hospitality, hotels, bars, restaurants or premium leisure.

• Experience leading multiple venues across a regional or national portfolio.

• Strong commercial acumen, including P&L management, budgeting, forecasting, labour costs, stock control and financial performance.

• A track record of driving sales growth, improving profitability and enhancing guest satisfaction.

• Excellent people leadership skills, with experience in recruitment, coaching, succession planning and performance management.

• Confidence building relationships with clients and senior stakeholders in customer-facing environments.

• A strong understanding of operational compliance, health and safety, audits and service standards.

• Experience delivering operational change, new concepts, menu launches, site mobilisations or improvement programmes.

Desirable experience

• Experience in luxury hospitality, premium retail or high-end food and beverage environments.

• Knowledge of Champagne, wine, cocktails and premium beverages.

• Experience with premium brands or destinations such as Harrods, Selfridges, Fenwick, John Lewis, Heathrow VIP, luxury hotels or high-end restaurant groups.

• A WSET qualification or equivalent knowledge of wine, Champagne and premium drinks.

• Experience managing alcohol licensing requirements across multiple sites.

• Experience maintaining consistent brand standards and guest experiences across a multi-site operation.
