Sous Chef – Luxury Hotel, Spa & Estate (Near St Austell)
We’re looking for a talented and motivated Sous Chef to join the kitchen team at a stunning hotel, spa, and country estate set within 43 acres of beautiful Cornish countryside near St Austell.

The Role
As Sous Chef, you’ll play a key leadership role in a fast-paced, fresh food environment. You’ll support the Head Chef in delivering consistently high standards across service, while helping to lead and inspire the team.
You’ll also take responsibility for running the kitchen in the Head Chef’s absence, so confidence and calm leadership are essential.
Key responsibilities include:
• Supporting menu development using fresh, seasonal and locally sourced ingredients
• Leading kitchen operations across all sections, including pastry
• Maintaining exceptional food quality, presentation, and consistency
• Managing stock control, costings, and reducing waste
• Supporting, training, and motivating the kitchen team
• Ensuring compliance with all food hygiene and safety standards
About You
We’re looking for someone who is:
• Experienced in a fast-paced, fresh food or hotel kitchen
• Confident across multiple sections (including pastry preferred)
• A strong and supportive leader with excellent communication skills
• Passionate about food, creativity, and seasonal produce
• Highly organised with strong attention to detail
• Commercially aware, with a focus on cost control and waste reduction
