New Japanese Counter Restaurant | Soho

We’re looking for an Assistant General Manager to join a newly opened, intimate Japanese restaurant opening in Soho.

The concept is centred around a 20-seat counter, with sushi hand rolls, British influences, strong drinks, and highly personal service. Every guest sits at the counter, so the experience is close, interactive and all about attention to detail.

This is a small, hands-on team and a great opportunity for someone who wants to take real ownership, learn quickly, and help shape the operation from the beginning.

The role

You’ll work closely with the General Manager, Head Chef and owner, with shared responsibility across the day-to-day running of the restaurant.

Key responsibilities will include

• Supporting the General Manager with the smooth day-to-day operation of the restaurant
• Leading service and maintaining a warm, polished and highly personal guest experience
• Helping to build and maintain a strong team culture
• Supporting training, standards and service consistency
• Managing stock control, inventory and ordering
• Helping put strong operational processes in place
• Supporting HR, health & safety and general restaurant administration
• Overseeing reservations and restaurant systems
• Supporting the drinks programme and maintaining strong product knowledge
• Working closely with the kitchen and bar teams
• Taking ownership during service and stepping in wherever needed

This is very much a hands-on role. We’re looking for someone who enjoys being on the floor, works well in a small team, and is happy to get involved in every part of the operation.

About you

We’re looking for someone with strong restaurant experience and a genuine interest in food, drinks and hospitality.

You’ll ideally have

• Previous experience as an Assistant General Manager, Restaurant Manager or strong senior floor manager
• Experience within quality independent restaurants or premium hospitality
• Strong drinks knowledge
• Excellent guest-facing skills
• Good operational and organisational ability
• Confidence working in a small, high-touch environment
• Experience with stock control, systems and restaurant processes
• A collaborative, low-ego approach
• A calm, positive and hands-on management style

Experience in Japanese dining, counter concepts or restaurants with a similar level of service would be useful, but attitude and cultural fit are just as important.

The team

The restaurant will have a small team of around 10 across kitchen, floor and bar.

The owner is very involved in the business and regularly on the floor, working closely with the General Manager and Head Chef. The aim is to create a supportive, family-style team culture with shared responsibility and plenty of opportunity to learn.

The package

• £45k–£48k + bonus, depending on experience
• 48-hour working week
• Sundays closed
• Current restaurant operation: Dinner only Monday and Tuesday, lunch and dinner Wednesday-Saturday. Approx. 10pm restaurant close on weekdays, 10:30pm on weekends
• 22 days holiday + your birthday off + bank holidays
• Immediate start preferable but will wait for the right person
• 6-month probation period
