Executive Chef - International Cruise Line

You, as the BRILLIANT Executive Chef will be involved in management of all aspects of the kitchen operations, including provision planning, staffing, and scheduling, training, and shift execution. This individual will also exude pride in culinary excellence, demonstrate food skills, and be capable of sound, profitable management techniques.

Role: Executive Chef; Cruise line: International Cruise Line; Salary: $4800-6000 USD per month Tax free – paid whilst on board only; Rotation:4 months on and 2.5 months off; Flights, accommodation, food and uniform all provided by the cruise line.;

Responsibilities:

Acts as an integral part of management team.; Produces reports and action plans for The F&B Director to utilize in operations.; Ensures profitability of the B.O.H. operation.; Ensures recipe procedures and execution standards are being met.; Train new culinarians on current and new procedures.; Ensures proper safety and sanitation in kitchen.; Ensures proper equipment operation/maintenance.; Ensures proper par levels for all equipment and supplies.; Maintain and review all current recipes and procedures.; Purchasing/Inventory control.; Search for improvements and efficiencies.; This person will report directly to the F&B Director.;

Requirements:

Cruise Ship experience as Executive Chef is preferred or you can have 5 years’ experience as Executive Chef from a large resort or 5* Hotel.; Excellent command of the English language; Computer savvy and ideally have a good understanding of POS systems; Detail orientated; Well-spoken and excellent communication skills;

A Culinary Portfolio will be required.
